Buttermilk is made from curd.
In Kerala, flavoured buttermilk is called Sambharam which is a popular thirst-quencher in households.
As curd is churned to make butter, it loses fat and the by-product is buttermilk.
The fat, butter, is another Sapins product. Local ingredients such as green chillies, ginger, salt and curry leaves are added to flavour the low-fat buttermilk.
